Olive oil is a vegetable oil extracted culinary use the fruit of the olive tree 
(Olea europaea) called olive or olive. Almost a third of the olive pulp is oil and, for this reason , since ancient times is easily removed with a simple pressure from a mill. Its use is primarily culinary, but has been used for cosmetic, medicinal and religious uses and for oil lamps. The oil is extracted from ripe olives between six and eight months, just when they contain the maximum amount of oil which usually occurs in late autumn. Olives undergo a first pressure in order to extract the juice. Oil quality depends largely on the further processing. For this reason producers monitor these steps carefully. Quality olive oil is judged by its organoleptic properties and its content of free fatty acids.
