In Spain there are many types of sausages, which can be cured as chorizo, salami and spicy sausage or cooked, such as morcilla (blood drawn) and that some modern authors describe about eighteen kinds of sausage in Spanish cuisine, the sausage and androlla. Almost all are from pork and never smoked. Other examples are more exotic like the botillo, made with pork bones. The ham while not a sausage, is the most popular deli, so habitual that can be said to have range of national dish.
