Ricotta cheese and spinaches Ravioli over peas cream, squid and confit's tomatoes

 Ingredients:
 400 gr ricotta and spinaches Ravioli Buttarelli

 For the cream:
320 gr of peas
40 gr. of shallot
1dl cooking cream

 For the squids:
350 gr of fresh squids
20 ml of extra virgin olive's oil

 For the tomatoes:
 200 gr  cherries tomatoes
1 lemon
salt, pepper, sugar.

 Ingredients for pasta pasticciata (serves 4)

300 gr. of ground beef, 500 ml of milk, 50 grams of flour, 50 g butter, 250 grams of pasta, 800 gr of tomato sauce, half onion, 1 carrot, 1 celery, 2 tablespoons olive oil, half a glass of red wine, grated cheese, 2 mozzarella, nutmeg, salt, pepper, chili pepper


Tomatoes stuffed with rice

 Ingredients

 1 cup Arborio rice (or other short-grain white rice)
 6 ripe but firm large tomatoes
 4 tablespoons olive oil, plus extra for drizzling
 Salt and freshly ground black pepper
 1 garlic clove, minced
 3 tablespoons chopped fresh basil leaves
 2 tablespoons chopped fresh Italian parsley leaves
 1/4 cup grated Parmesan

Risotto parmigiano e Balsamico

 Ingredients for 6 person:

 white wine

 100 g. of butter

 150 g. parmesan cheese

 40 g. onion

 Menu's Ingredients:

 480 g Carnaroli rice

 superbrodomanzo casamia

 Traditional Balsamic Vinegar of Modena

 extra virgin olive oil 40 g

TORTA PASQUALINA

Ingredients

 500 gr spinach, roughly chopped (can substitute with cavolo nero or silverbeet)

 6 eggs (2 for the ricotta, 4 for the pie)
 80 gr finely grated mozzarella (or grated fresh parmesan)
 400 gr fresh ricotta
 1/4 cup fresh oregano leaves, roughly chopped (can be substitute with marjoram)
olive oil for brushing
 sheets of frozen puff pastry (I used about 3 to cover a 20cm springform tin)

 1 egg for the eggwash

OLIVE ALL’ASCOLANA

 Ingredients:

 (for 5-6 people, about 60 olives):

 400 gr. of lean beef

 150 gr. lean pork

 50 gr of chicken (or turkey)

 500 gr. large green olives

 2 eggs for breading, breadcrumbs, flour, nutmeg, olive oil, onion, carrot, celery, dry white wine, salt.

It is optional in adding ketchup to the mix, cloves, pepper, grated lemon peel.

 100 gr. butter

 1 small onion

 400 gr. rice

 Barolo wine 250ml

 1 L broth (approximately)

 50 gr. grated Parmesan

 solid freshly ground black pepper

 white truffles to taste
